Okara is the solid soy bean paste left over when you make your own soy milk. After you’ve squeezed out all the milk from the beans you are left with these solids.
“Waste not want not” as they say, so why not make them into something delicious like cookies? I chose to dip mine in dark cooking chocolate but experiment with sweeteners. When I first followed this recipe I used some white sugar I had left lying around the cupboard and two tablespoons were not enough. Using something like Stevia may work because it is much sweeter than sugar. Play around with it.
