I sometimes make my own soy milk but once you’ve squeezed those beans you are left with a lot of solid bean mush and nowhere for it to go so I’ve adapted a family rock cake recipe to include this ‘waste’ and they turned out pretty well.
Ingredients
6 oz margarine
8 oz sugar
8 oz self-raising flour
8 oz oats
6 oz dried fruit (use your favorite)
2 tsp. cinnamon
8 oz okara
2 eggs
You can try egg replacement such as pureed tofu. Use a quarter cup of tofu for each egg. Baking soda and vinegar. Use 1 tbsp. of white vinegar mixed with 1 tbsp. of baking soda per egg. Mashed banana. Use one ripe, mashed banana for each egg.
Directions
Pretty simple really. Just mix all the dry ingredients in a bowl, combine the margarine and add enough water to bring the mixture to a scone-like stiff mixture.
Place rough heaps of the mixture onto greased baking trays.
Bake in the oven at Gas 6/410F/190C for about 15-20 minutes.
Let them cool and remove with a spatula or flat knife.
