Just tried out these easy-to-make bars and pleased with the results. You may have to experiment with the amount of peanut butter and coconut oil you use if the mixture seems a little dry when the oats are coated.
450 g porridge oats
200 g (or more) peanut butter
3-5 tbsp. coconut oil
300 g dark chocolate
Melt the peanut butter and coconut oil in a saucepan and gradually stir in the oats.
Put the oats into a lined or greased baking tray and press the mixture down firmly.
Melt the chocolate in a double pan or nuke in the microwave in a heat resistant bowl.
Pour the melted chocolate over the oats and spread evenly.
Put the mixture in the fridge for at least an hour and then cut into your preferred shapes and sizes.
